Soak gelatin for 10 minutes with a few tablespoons of water. Rub the lemon peel and add to the buttermilk with the lemon juice and vanilla sugar.
Heat gelatin while stirring until it has completely dissolved. Slowly stir the buttermilk into the gelatine and add the sugar to taste.
Divide the mixture into bowls and place in the refrigerator for about 3 hours.
