Wellington Beef by Gordon Ramsay

The famous recipe for beef with ham and mushrooms in puff pastry from the virtuoso chef Ramsay! A dish for real men! Be sure to cook it, it’s worth it!

Ingredients

  • Beef – 800 Grams (tenderloin)
  • Champignons – 400 Grams
  • Ham – 250 Gram
  • Mustard – 2 Tbsp. spoons
  • Olive oil – 3 tbsp
  • Yeast-free puff pastry – 300 grams
  • Salt – To taste
  • Freshly ground pepper – To taste
  • Chicken Egg – 2 Pieces (raw yolks)

Directions

  1. Prepare all the main ingredients. Wash the meat and mushrooms thoroughly. Defrost the dough in advance.
  2. Dry the meat with a paper towel, rub with salt and freshly ground pepper.
  3. Fry the meat over high heat in olive oil on both sides, about 2 minutes on each side! A golden crust should appear, but inside it will not be ready. We spread the meat from the pan and immediately grease with mustard.
  4. Cut the mushrooms into pieces, season with salt and pepper, then punch with a blender. Put the mushroom pate in a dry frying pan without oil and fry the mushrooms until all the liquid has evaporated. About 7-10 minutes.
  5. Spread the ham overlap.
  6. Spread the mushrooms evenly on the ham.
  7. Put beef in the middle and wrap it in ham. We wrap the whole thing tightly with cling film and put it in the refrigerator for 20 minutes.
  8. While the meat is resting, roll the dough into a square layer on a floured surface. After 20 minutes, free the meat from the cling film and place in the middle of the dough. Grease the sides of the dough around the meat with plenty of yolk.
  9. Wrap the meat in the dough. All seams and the entire surface of the dough must also be greased with yolk.
  10. Place the dough in a greased baking dish or on a baking sheet, seam side down. Make cuts on top with a knife and sprinkle with salt.
  11. And now about the baking! According to Ramzi’s recipe, we put everything in the oven for 30-40 minutes at a temperature of 200 degrees. During this time, the dough will be completely ready, and the meat will be “Medium Rare” roasted with blood. If, like me, this is not to your taste, then carefully cover the form with foil, reduce the oven temperature to 150-160 degrees and set it to bake for another hour! Then the meat will be completely ready!
