Salmon Ceviche: Recipe from Cheff Gordon Ramzi

A ceviche is an option for serving finely cut ingredients – universal for bruschetta, eating just like a salad, as an excellent accompaniment to eggs.

Ingredients

  • Salmon fillet (fresh) 300 g
  • Chilli (red, remove seeds, and chop finely) 1 pc.
  • Green onion (cut the tail off and slice thinly diagonally) 1 stem
  • Garlic (peel and chop finely) 1 clove
  • Cilantro (chop) 1 handful
  • Watercress (small, optional) 1 handful
  • Lemon juice to taste
  • Soy sauce 2 tbsp
  • Sesame oil 2 tbsp
  • Olive oil to taste
  • Sea salt to taste
  • Sugar 1 pinch
  • Black pepper (freshly ground) to taste

Directions

  1. Prepare the dressing: Whisk the lemon juice with soy sauce, sesame oil, and olive oils. Season with salt and pepper and add some sugar to taste.
  2. Slice the salmon and place the slices on a plate with a slight overlap. Sprinkle with chili, green onions, and garlic. Drizzle with the dressing and leave to marinate for 5-10 minutes.
  3. Sprinkle the ceviche with coriander leaves before serving and garnish with watercress if desired.
