Ingredients

  • 0.5 ½ cucumber (s)
  • 1 small zucchini, about the same amount as the cucumber
  • 1 small onion (s), red
  • 30 g capers
  • 1 clove garlic
  • 6 mint leaves
  • 5 stalks parsley, smooth or coriander
  • 1 teaspoon herb vinegar
  • 2 tablespoon oil (lime oil)
  • Salt (Flor de Sal Lime)
  • 0.5 teaspoon ½ sugar
  • pepper

Instructions

  1. Wash and dice the cucumber and zucchini. Dice the onion very small, finely chop the garlic and herbs. Leave the capers whole.
  2. Put everything in a bowl and make a dressing from the other ingredients. Pour this over the vegetables and let it steep for about half an hour.
  3. A very fresh salad that is also delicious when chilled.
