- 500 g zucchini
- 500 g tomato (s)
- 2 onions)
- 75 g almond (s), chopped
- 2 cloves garlic
- 1 teaspoon marjoram
- 1 cup vegetable broth
- 4 tablespoon olive oil
- salt and pepper
- sugar

- Cut the zucchini and onions into slices. Peel, core and dice tomatoes.
- Toast the almonds in a hot pan with a little sugar.
- Sauté the onion slices in the olive oil, squeeze the garlic and add the zucchini slices. Sauté for a few minutes, lightly brown. Add the tomato cubes and deglaze with the broth. Add marjoram, salt, pepper and simmer for a few minutes until soft.
- Then stir in the caramelized almonds and serve.
- Highly recommended as a starter!
