Ingredients

  • 500 g minced meat
  • 250 g rice
  • 1 large onion (s)
  • 1 large carrot (s)
  • 1 large bell pepper, red
  • salt and pepper
  • Cayenne pepper
  • 200 g tomato paste
  • 800 ml vegetable stock, possibly a little more
  • 150 g corn
  • 1 small chilli pepper (s)
  • some chives
  • some oregano

Instructions

  1. Wash, clean and cut the onion, carrot and bell pepper into small cubes, about the same size as the corn. Also cut the chives and chilli into small pieces and drain the corn.
  2. Sweat the onion until translucent, add the minced meat and fry. Now add the carrots and peppers and fry them lightly. Season with pepper, salt and cayenne pepper. Add half a tube of tomato paste and roast a little, now stir in the NOT cooked rice and pour in the broth.
  3. Simmer gently with the lid on for about 20 minutes, stirring occasionally. If it`s too thick, add a little more stock. Then stir in the corn and chilli, add oregano and chives and season again to taste.
