Instructions

  1. First knead flour, quark (I use 40% fat in dry matter), egg and salt to taste with the hand mixer and then shape into a dough again by hand.
  2. Dust the work surface with flour and form potato noodles from the dough by hand (roll out with the palm of your hand).
  3. Bring the water to a boil in a pan, add the noodles to the boiling water.
  4. In the meantime, melt the butter and after about 10 minutes of cooking, add it to the grinding noodles in the water. Stir a few times and season again STRONGLY and season to taste.
  5. The recipe is simple, but also very tasty and thrives on the salty note.

About Editorial Staff

The Boss Kitchen editorial staff oversees content review, fact-checking, and recipe verification across the site. Published articles pass through the editorial team before going live, ensuring ingredient lists, techniques, cooking times, and nutritional claims hold up in a home kitchen. The team coordinates contributions across the site writers, handles reader corrections, and maintains consistency in measurement conventions, safety guidance, and dietary labeling. Posts under this byline typically represent team-reviewed reference material, site announcements, or editorial roundups rather than individual-author features, and they are held to the same sourcing standards as bylined recipe and product coverage.
