Ingredients

  • 100 g onion (s)
  • 2 cloves garlic)
  • some stalks thyme, fresher
  • 200 g potato (s), waxy
  • 400 g apples, sweet and sour
  • 40 g butter
  • 50 ml white wine
  • 500 ml vegetable stock
  • 250 ml whipped cream
  • 4 slices Parma ham
  • 1 tablespoon olive oil
  • salt and pepper

Instructions

  1. Finely chop the onions and garlic. Peel potatoes. Peel and quarter the apples and remove the core. Cut the apples and potatoes into small pieces.
  2. Melt the butter in a saucepan, fry the onions, garlic, apple and potato pieces for 2 minutes until translucent. Pour in the wine and let it boil down. Top up with vegetable soup and cook over medium heat for 15-20 minutes. Add the cream and thyme leaves and finely puree the soup with a hand blender or in a blender.
  3. Fry the prosciutto slices in a pan with a little olive oil until crispy.
  4. Spread the soup on preheated plates, sprinkle with fresh thyme and arrange the crispy prosciutto slices on the edge of the plate.
