Ingredients

  • 375 grams flour
  • 40 g suar
  • 1 lemon (s), untreated, zest it
  • 21 g yeast, fresh
  • 200 ml milk
  • 40 g butter
  • 1 egg (s)
  • 375 g apples
  • 2 teaspoons lemon juice
  • 3 tablespoon apricot jam

Instructions

  1. Sift the flour into a large bowl. Make a well in the middle and mix the yeast together with a little sugar and a little lukewarm milk to form a small pre-dough. Dust with a pinch of flour and cover and leave in a warm place for about 20 minutes.
  2. Then add the rest of the lukewarm milk, sugar, butter, egg and lemon zest. Mix everything with the dough hook of the mixer. Then knead into a smooth dough with your hands. Cover and let rise for another 20 minutes.
  3. In the meantime, peel, quarter, core and cut the apples into small pieces. Drizzle with the lemon juice. (If you like, you can also add 2 teaspoons of cinnamon.) Knead the apple pieces into the dough and place in a greased loaf pan.
  4. Bake in a preheated oven (175 degrees) for about 45 minutes. After baking, turn the cake out of the pan and let it cool down. Heat the jam and brush the cake with it. Sprinkle with granulated sugar.
