Ingredients

  • 2 kg apples
  • 2 tablespoon, leveled sugar
  • 0.25 liter ¼ apple juice
  • some lemon juice
  • Ground cinnamon

Instructions

  1. Peel the apples, cut them into eighths and remove the core.
  2. Melt 2 level tablespoons of sugar in a saucepan until it caramelizes (approx. 2 minutes). Then add the apple wedges and stir vigorously over reduced heat until the caramelized sugar loosens slightly from the bottom of the pan (another 1 - 2 min.). Then pour in 0.25 l of apple juice, cover and cook until the apples are completely soft.
  3. Then use a potato masher to mash the apples. For the final consistency, add a little apple juice if you like. Finally, add sugar, lemon juice and cinnamon to taste.
