Thanks to the applesauce, this cake is incredibly flavorful and quite moist. And honey and brown sugar give the baked goods an even more original taste. Such a cupcake is a great addition to a family tea party!

Ingredients
Apples – 600 g (3 pcs.)
Flour – 250-300 g
Brown sugar – 100 g
Honey – 75 g
Kefir – 200 ml
Baking powder – 1 teaspoon
Soda – 0.5 teaspoon
Vanilla sugar – 1 teaspoon
Vegetable oil – 20 g
Directions
Apples work best in sour varieties.
Make mashed potatoes first. Rinse the apples, peel them, remove the core with seeds. Chop the apples at random.
Put the apples in a saucepan, pour in a couple tablespoons of water, cover and put on fire.
Simmer the apples, covered, for about 10-15 minutes, until soft. Cooking time depends on the apple variety. If during the stewing process, the apples are squeezed in a lot of juice, then put the finished apples on a fine sieve so that the mashed potatoes do not turn out to be too liquid.
Punch the finished apples into mashed potatoes with a hand blender.
Measure out 200 g of puree and let it cool completely.
Turn on the oven to heat up to 160 degrees. Send flour to a bowl, for a start, take 250 g (about 2 cups of 200 ml), because the thickness of kefir and mashed potatoes can affect the required amount of flour. Add sugar, baking powder, baking soda and vanilla sugar to the flour.
Mix everything thoroughly.
In another bowl, combine applesauce, honey (if candied, heat it slightly in the microwave), kefir and vegetable oil. Mix everything.
Add dry ingredients to liquid ingredients in several steps.
Stir until smooth. The thickness of the dough should be like a pancake. If the dough is thinner, add the remaining flour.
Line a baking dish with parchment. My form is 25×11 cm. A smaller form should not be taken in order for the cake to bake well. Pour the dough into a mold.
Bake the muffin in an oven preheated to 160 degrees for about 60-80 minutes. Check the readiness of the cake with a wooden skewer. If the cupcake is browned but not ready yet, cover it with foil on top.
Allow the cooked applesauce cake to cool completely on a wire rack. Cut the cooled muffin into portions and serve.
