Ingredients

  • 100 ml water
  • 40 grams sugar
  • 10 g vanilla suar
  • 800 g apricot (s)
  • 2 egg (s)
  • 2 egg yolks
  • 60 g suar
  • 10 g vanilla suar
  • 500 g mascarpone
  • 2 egg whites
  • 200 ml apricot juice, collected
  • 50 g apricot liqueur or apricot water
  • 200 g ladyfiners or nut or chocolate macaroons

Instructions

  1. Bring the water, sugar and vanilla sugar to the boil. Simmer the apricots in it for about 3 minutes over a low heat. Drain and collect juice.
  2. Beat the eggs, egg yolks, sugar and vanilla sugar until very frothy. Stir in the mascarpone. Beat the egg white until stiff and fold in.
  3. Soak the macaroons lightly with liqueur and compote juice. Layer macaroons, apricots and cream in layers in a suitable bowl. Min. Chill for 2 hours.
  4. Garnish with apricots and chocolate powder before serving.
