Arrosh Dose (Rice Pudding with Lemon and Cinnamon)

Arrosh dosé – a dish of Portuguese cuisine, rice pudding with lemon, or, in a more familiar sense for us, sweet rice porridge with milk with a rich lemon flavor. Arrosh dose is usually served as a dessert, generously sprinkled with cinnamon.

Servings: 3

Ingredients

  • Rice – 200 g
  • Egg yolk – 2 pcs.
  • Milk – 230 ml
  • Sugar – 120 g
  • Lemon – 1.5 pcs.
  • Butter – 1 tbsp
  • Salt – 0.3 teaspoon
  • Cinnamon to taste
  • Water – 500 ml

Directions

  1. Wash the lemons and wipe dry. Remove a thin layer of zest from the lemons, being careful not to catch the white part. Bring water with zest to a boil, boil all together for 1 minute.
  2. Add salt and butter to the water with zest. Let the oil dissolve in the water.
  3. Pour washed rice into lemon water, bring the liquid to a boil and simmer the rice under a lid over low heat until the water evaporates about 20 minutes.
  4. Pour boiling milk into rice porridge, add sugar.
  5. Stir and cook the rice porridge for another 10 minutes over low heat, until the rice is fully cooked.
  6. Separate the egg yolks from the whites, we don’t need the whites. 2-3 tablespoon add cooked rice to the yolks, mix well, and add this mass to the rice porridge.
  7. Stir and heat the rice pudding over low heat for 2-3 minutes.
  8. Remove the lemon zest from the rice porridge and place the lemon rice in glasses or bowls.
  9. Sprinkle each serving with ground cinnamon.
  10. Arrosh dose can be served at the table.
