  • 2 egg (s)
  • 1 tablespoon mustard
  • 1 tablespoon vinegar
  • 2 tablespoons oil
  • salt
  • pepper
  • sugar

Instructions

  1. Peel white asparagus (wash green asparagus) and cook in salted water with a little sugar. You can also mix green and white asparagus.
  2. Boil the eggs hard, let them cool, peel them and mash them with a fork to crumbs.
  3. Prepare a vinaigrette from mustard, vinegar, oil, pepper and salt. Add eggs and pour over the asparagus. Let something go through.
