- 1 shallot (s)
- Mineral water
- Pepper, red

- Cut the avocado open, core and scrape out the pulp and mash it in a bowl with a fork. Put some lemon juice on top to keep them from turning brown. Then dice the shallot and add to the avocado puree. Add the quark, some mineral water and season with red pepper, herbal salt and pepper to taste. Potatoes go well with it.
