Ingredients

  • 3 egg (s), size L (one more for size M)
  • 1 avocado (s)
  • 1 small onion (s), red
  • 50 g butter or hee (the latter if you want it to be lactose-free)
  • 100 g bacon
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sambal oelek
  • 1 dash vinegar (garlic vinegar)
  • 1 clove garlic
  • 1 pinch (s) vegetable stock, instant, clear
  • 1 pinch (s) salt
  • 1 pinch (s) pepper
  • 1 pinch (s) spice mixture, Italian, fresh or frozen, not dried!
  • 1 pinch (s) chives, fresh or frozen, not dried!
  • 1 pinch (s) fenugreek

Instructions

  1. Hard boil eggs. When they`re done, peel them and either use an egg cutter or knife to chop them up to make them easier to mash. At the same time cut the bacon into small pieces and fry in a pan without fat until it is crispy. Then put aside.
  2. Cut the avocado into cubes. To peel the avocado, it is best to cut the avocado on one side, then peel it with your fingers. Then cut into the avocado around the core in a line, pull the halves apart to expose the core. Remove the stone, then dice the avocado.
  3. Melt butter or ghee in a small bowl in the microwave oven or in a small saucepan on the stove, do not let it boil!
  4. Finely dice the onion. Peel and squeeze the garlic cloves. Put all ingredients (including spices) in a tall container in which you can puree. Puree everything.
  5. Serve either in small bowls or glasses, sprinkle the crispy bacon on top as a decoration. Then serve.
  6. Additional tips:
  7. Please always use either fresh herbs or frozen herbs, not dried ones, as the aroma of the herbs is lost here.
  8. Bacon without sodium nitrite should also be selected for dry heating, as otherwise nitrosamines can form here, which are harmful to health. Incidentally, this also applies to grilling, so be sure to grab bacon from the butcher.
  9. Is suitable either for 2 people as a low-carb breakfast or for 4 people as a small starter, as the whole thing is very filling. Can either be eaten pure or with pastries. Pretzel sticks are particularly suitable for this.
  10. Can also be used as a dip.
