Ingredients

  • 4 chicken breast fillet (s), skinless, approx. 125g per piece
  • 1 melon (s) (Galia melon), approx. 800 g
  • 150 g cherry tomato (s)
  • 100 ml balsamic vinegar, white
  • 1 head lettuce
  • 15 mozzarella (mini)
  • 1 bunch chives
  • 1 bunch chervil
  • 2 tablespoon olive oil
  • sugar
  • salt
  • pepper

Instructions

  1. Fry the fillets vigorously all around in hot oil, cook over medium heat for approx. 12 - 15 minutes.
  2. Remove the fillets from the pan, season with salt and pepper, set aside.
  3. Wash the lettuce and pluck it into bite-sized pieces. Clean the tomatoes, cut in half. Drain the mini mozzarella, if you like, chop it roughly.
  4. Wash the chives and cut into small rolls. Put something aside for garnish. Clean the chervil and pluck the leaves from the stems.
  5. Quarter and core the melon, peel the quarters and cut into wedges.
  6. Mix the vinegar, salt, pepper, sugar, chives and oil together.
  7. Mix the lettuce, melon, mozzarella, tomatoes and chervil, arrange on 4 salad plates, pour the salad sauce over them.
  8. Cut the chicken breast fillets into attractive slices and add to the salad.
  9. Garnish the salad with chives and serve.
