Ingredients

  • 2 spring onion (s)
  • 1 clove garlic
  • 200 ml coconut milk
  • 400 ml vegetable stock
  • salt and pepper
  • sugar
  • 1 banana (s) (the riper, the more the desired banana flavor comes through)
  • 2 chilli pepper (s), more or less depending on the degree spiciness
  • 1 tablespoon oil

Banana – Coconut – Chili – Soup

Instructions

  1. Thinly slice the spring onion, clove of garlic, chiles and banana.
  2. Heat the oil in a pan and briefly fry the onion with the garlic and chilli. Pour coconut milk and vegetable stock, bring the soup to a boil and season with pepper, salt and sugar. Let the soup simmer for 5 minutes. Then add the bananas and puree the soup. Briefly heat the soup again and serve decorated with banana slices if necessary.
