Beef Cutlets with Sauerkraut

Cutlets with vegetables are always not only tasty but also juicy. I offer one of the options for hearty cutlets for lunch or dinner. Beef cutlets with sauerkraut will complement any side dish, both vegetable and any cereal. They can be served on their own as a meat dish with a suitable sauce.

Servings: 5

Ingredients

  • Beef (or minced beef) – 550 g
  • Sauerkraut – 400 g
  • Onions – 215 g
  • Eggs – 3 pcs.
  • Flour – 80 g
  • Bread crumbs – 150 g
  • Salt – 2 pinches (or to taste)
  • Ground black pepper – on the tip of a knife (or to taste)
  • Vegetable oil – 80 ml

Directions

  1. Peel the onion and cut it into cubes. Pour about 20 ml of vegetable oil into a frying pan and heat. Add the onion and sauté over medium heat for 4-5 minutes.
  2. Add sauerkraut to the fried onions. Stir. Cook over moderate heat for about 15 minutes to soften the cabbage.
  3. Cool the finished cabbage to room temperature.
  4. Rinse and dry the beef well. Cut into small pieces.
  5. Pass the sliced ​​meat through a meat grinder. Send to a deep bowl.
  6. Then pass the fried cabbage and onions through a meat grinder.
  7. Beat in 1 egg. Add 1 pinch of salt (or to taste). Mix the minced meat well and beat off. Lift the minced meat with your hands and throw it back into the bowl. Do this 15-20 times. Thanks to this, the minced meat will become denser, and the cutlets will keep their shape well.
  8. Form the minced meat into the desired size. I got 11 pieces.
  9. Drive the remaining 2 eggs into a convenient deep container, add 1 pinch of salt and black pepper on the tip of a knife. Shake the eggs with a fork. Pour flour into the second container, and breadcrumbs in the third. Lightly sprinkle each piece with flour. Then dip in an egg and bread in breadcrumbs.
  10. Heat the remaining oil in a skillet. Layout the meat pieces. Fry over medium heat for 3-5 minutes on each side, until golden brown. The roasting time depends on the intensity of the burner flame and the size of the meat pieces.
  11. Place patties on a paper towel to absorb excess fat.
