Instructions

  1. Remove the steaks from the refrigerator 1 hour before cooking.
  2. Rinse the steaks and pat dry with paper towels.
  3. Place an ovenproof baking dish on the middle rack. Preheat the oven to 85°C (185°F) on top/bottom heat (gas setting 1).
  4. Heat oil in a frying pan over medium-high heat. Sear the steaks for 2 minutes on each side. Season with salt and pepper from the mill. Transfer the steaks to the hot baking dish and cook in the oven for 45–50 minutes at 85°C (185°F).
  5. Warm the serving plates in the oven with the baking dish during the final minutes of cooking, or warm them separately in the microwave.
