  • 4 slices cheese, slightly melting, strong, semi-hard (e.g. Chaume)
  • 8 slices aubergine (s), cut lengthways
  • salt
  • 2 egg (s), whisked
  • Flour
  • Olive oil, for frying

Instructions

  1. Place 1 slice of cheese between 2 aubergine slices. Sprinkle the eggplant sandwich with salt on both sides. Dip in egg, then turn in flour. Fry on both sides in a little olive oil over medium heat until golden brown. Serve hot.
