Whip the cream, but not too hard. Now mix in the cheese. Squeeze in the garlic and add a little fondor to taste. Stir everything and place in the refrigerator for at least 4 hours or overnight.
Just before serving, stir again and season to taste. Cut the red onion into small cubes and sprinkle over the dip like the chives.
