Ingredients

  • 250 g onion (s), diced
  • 200 g celery, diced
  • 1 cucumber (s), diced
  • 8 clove (s) garlic, finely chopped
  • 50 g clarified butter
  • 5 liters tomato juice
  • 300 ml lemon juice
  • 3 tablespoon sugar
  • 1 teaspoon Tabasco
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, freshly ground
  • 1 bottle vodka, ice-cold
  • 2 bunch spring onion (s), with the green, chopped

Instructions

  1. Fry the onion, celery, cucumber and garlic in clarified butter over a mild heat until soft. Add tomato and lemon juice, sugar, Tabasco and Worcestershire sauce, bring to the boil and let steep for 10 minutes. Let cool, season with salt and pepper and put in the fridge.
  2. Each serving of the ice-cold soup is given a shot glass of vodka and sprinkled with chopped spring onions.
  3. It makes a special impression on the guests when you freeze the vodka bottle in a block of ice. Put on the table wrapped in a towel.
