Fry the onion, celery, cucumber and garlic in clarified butter over a mild heat until soft. Add tomato and lemon juice, sugar, Tabasco and Worcestershire sauce, bring to the boil and let steep for 10 minutes. Let cool, season with salt and pepper and put in the fridge.
