Ingredients

  • 500 g white bread, approx., Diced
  • 4 tablespoon butter
  • 1 large onion (s), chopped
  • 2 sticks celery or celeriac
  • 1 large apple (Boskop), peeled and diced
  • 1 cup chestnut (s), finely chopped (or roasted walnuts)
  • 1 ½ teaspoons sage, dried
  • 1 teaspoon thyme, dried
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 250 ml apple juice or turkey or chicken stock

Instructions

  1. Dry the bread cubes in the oven on a low heat (approx. 120 ° C).
  2. Melt the butter in a pan and sweat the onion in it, add the celery and sweat for another 5 minutes. Do the same with the apple pieces and finally mix in the chestnuts, bread cubes and herbs. Season to taste, because it should be harmonious. Now let the mixture cool down.
  3. Just before filling the turkey, add 125 ml of apple juice to the filling. Do not fill the turkey too tight as the filling will expand.
  4. We always bake the filling separately in a baking dish:
  5. To do this, distribute flakes of butter on the surface and pour in the remaining amount of apple juice. Bake covered at 190 ° C for 30 minutes. Remove the lid after 15 minutes.
