Ingredients

For the dough:

  • 1 point flour
  • 1 teaspoon salt
  • water

For the filling:

  • 1 pack sheep`s cheese
  • 1 bunch parsley, smooth
  • onion (s), chopped (if necessary)
  • some oil
  • 150 g butter, melted
  • flour, for the work surface

Instructions

  1. Mix the flour and salt and add water so that a smooth dough is formed. If there is too much water in it, add a little more flour, or if there is too much flour in it, then add a little more water. Let the dough rest for 10-15 minutes.
  2. Crumble the sheep`s cheese and chop the parsley into small pieces. Then mix everything with a little oil.
  3. Divide the dough into small balls (the size of an orange). Flour the work surface and roll out the balls very thinly and fill one half with sheep cheese, parsley and, if necessary, with chopped onions and fold over the other half. Push the ends up and pinch them together with a fork.
  4. Heat the pizza pan to at least level 4. Fry the filled Börek on both sides without adding any oil, do not let them get too dark.
  5. Cut the Börek into small pieces, place on a large plate and pour the melted butter on top.
  6. Enjoy Börek with black tea.
  7. Sheep cheese is best bought in a Turkish shop (e.g. from Gazi). The onions don`t have to be, but that`s how we do it.
