Famous Mediterranean appetizer with feta cheese and watermelon slices with a savory dressing.

Ingredients
Grain bread (slicing) – 7 pcs.
Watermelon (pulp) – 100 g
Balsamic vinegar – 1/2 cup
Honey – 1 tablespoon
Ricotta cheese – 100 g
Feta cheese – 100 g
Basil (twigs) – 2 pcs.
Salt to taste
Black pepper (ground) – to taste
Directions
In a deep bowl, mix feta and ricotta and grind them until creamy. This can be done with a spoon if the feta is soft, or with a blender, if the cheese “does not lend itself” to a spoon.
In a small saucepan, combine honey and balsamic vinegar, bring to a boil, stirring constantly, and slightly boil the dressing over low heat until the desired degree of consistency. Leave the dressing to cool. Cut the watermelon into small cubes.
Dry the slices of bread in a grill pan or oven until crisp and let them cool slightly.
Spread generously the slices of bread with a spread of feta and ricotta.
Put slices of watermelon on top, sprinkle with finely chopped basil. If desired, bruschetta can be lightly seasoned with salt to enhance the flavor and ground pepper for piquancy.
Just before serving, sprinkle the bruschetta with a dressing of honey and balsamic vinegar and serve.
