Ingredients

  • 500 g minced beef, alternatively minced soy meat
  • g 1,500 butternut squash (se), cleaned
  • 200 g carrot (s), cleaned
  • 1 red pepper (s)
  • 180 g onion (s), cleaned
  • 1 piece (s) ginger (0 g), cleaned
  • 5 g arlic, cleaned
  • 1 tablespoon curry paste, red
  • 1 packet tomatoes, strained (500 g)
  • 1 can coconut milk (400 ml)
  • 1 tablespoon olive oil
  • 1 teaspoon, heaped curry powder
  • 2 tablespoon lemon juice, freshly squeezed
  • 2 tablespoon maple syrup
  • 1 teaspoon, heaped salt
  • Salt and pepper to taste

Instructions

  1. In a large saucepan or pan, heat the olive oil. Sear the beef or soy minced meat in it over high heat (my induction cooker has settings 1 - 9, I choose 9 here).
  2. In the meantime, finely chop the onions and dice the garlic and ginger very finely.
  3. When the ground beef is crumbly, turn the temperature down a bit (I`ll choose 5 here). Add onions, garlic and ginger and sauté as well. Make sure that there are not too many roasted substances.
  4. During this time, cut the remaining vegetables into cubes. Cut the pumpkin into approx. 3 cm x 3 cm, the carrots into approx. 0.5 cm x 0.5 cm and the bell pepper into approx. 2 cm x 2 cm cubes.
  5. Mix the curry paste and curry powder with the heaped teaspoon of salt into the minced meat, roast (again on setting 9) and stir well. Then add the carrots and sweat them, then add the pumpkin and finally the peppers. Deglaze with the coconut milk and the strained tomatoes. Reduce the temperature (I choose setting 4) and finish cooking for about 15-20 minutes. Then add lemon juice and maple syrup and season well with salt and pepper.
  6. There is also a good Basmati rice. But really watch out for good rice.
  7. This curry is easy to prepare and tastes delicious even when warmed up. Due to the alternative use of minced soy meat, the dish is vegetarian or vegan.
