Ingredients
For a biscuit:
Eggs – 6 pcs.
Sugar – 350 g
Flour – 250 g
Cocoa – 4 tbsp
Baking powder – 1.5 teaspoon.
Vegetable oil – for lubricating the mold
For the cream:
Condensed milk – 430 ml
Butter – 350 g
For filling:
Cherries (frozen) – 350 g
Semi-sweet red wine – 1 glass
Black chocolate – 120 g
Directions
We wash the cherries (I used 350 g of frozen cherries) and fill them with one glass of semi-sweet red wine, so that the cherries are covered with wine, and send them to the refrigerator for a couple of hours.
Cooking a chocolate biscuit. To do this, we separate the whites from the yolks. Beat the whites and gradually add sugar, whisking into a fluffy mass.
We introduce one yolk at a time and do not stop whipping.
Pour baking powder into flour, sift cocoa and mix well.
Pour the cocoa flour to the egg mass and mix gently from top to bottom with a spatula.
We cover the form in which we will bake the biscuit with parchment paper and grease the bottom and sides well with vegetable oil.
Pour the dough into a mold, level it well and send it to the oven, preheated to 180 degrees. We bake a chocolate sponge cake for 35-40 minutes.
Cool the finished biscuit and cut into three cakes.
Let’s make some cream for the cake. To do this, beat the softened butter until fluffy, gradually add the condensed milk and beat for another 3-4 minutes.
We squeeze the “drunk” cherries well from the juice.
Put the first cake on a plate and soak well with cherry juice.
We coat the cake well with condensed milk cream, spread the cherries.
Put the second cake on top, press it lightly and do the same: soak it, coat with cream and spread the cherry.
Soak the third cake on a separate plate, then gently turn it over, lay it out in the third layer and press it just as lightly.
We coat the top and sides of the cake well with cream.
We cut the chocolate with a special knife so that we get chocolate chips.
Decorate the sides of the cake with chocolate.
Decorate the “Drunken Cherry” chocolate cake with the remaining cream. I make small curls on top.
We also decorate the center of the cake with chocolate chips, and spread the cherries on the cream curls. We send the chocolate cake with cherries to the refrigerator for another 3 hours so that it is well saturated. We take out the finished cake “Drunken cherry” from the refrigerator, cut it and serve it to the table.
