Ingredients

  • 150 g Camembert (s), spicy
  • 100 ml cream
  • 5 tomato (s), fruity, ripe
  • 2 cloves garlic
  • 2 tablespoon olive oil
  • 1 tablespoon sugar
  • 0.5 teaspoon ½ honey
  • Herbs, fresh, Italian, e.g., basil, 2 - 3 leaves sage, oregano
  • parsley, fresh
  • 1 pinch (s) salt
  • 1 chilli pepper (s), fresh
  • Pepper, black, freshly ground
  • 1 tablespoon tomato paste

Instructions

  1. Cut the camembert into cubes. Finely chop the garlic cloves, heat a small pan over medium heat, core the chilli pepper and chop finely. Put the olive oil in the hot pan and fry the garlic and chilli.
  2. Remove the tomatoes from the stalk, but not from the semen, which belongs in the sauce, and cut into small cubes. Put the tomatoes in the pan, add the sugar and let everything boil down until the mixture almost begins to caramelize. Stir in the honey, stir in the tomato paste, season with pepper and add the cream.
  3. Turn the heat down to a low level so that the sauce only simmers a little. Pour in the camembert and let it melt. To see if you still need salt, it depends on the salt content of the cheese and if you like, you can add salt and pepper again. Add the freshly chopped herbs to the sauce, stir and serve immediately.
  4. The sauce tastes great with all kinds of pasta, I particularly like this sauce with fresh ravioli, e.g. with porcini mushroom filling.
