Caramel Pudding

Recipe for making caramel pudding. The sweet date pudding is baked in the oven, then caramelized and crispy. Serve caramel pudding with jam or whipped cream.

Ingredients

  • Pitted dates (chopped) – 1 cup
  • Soda – 1 teaspoon.
  • Softened butter or margarine – 10 tbsp
  • White sugar – 1 glass
  • Large egg – 1 pc.
  • Vanilla extract – 1 teaspoon
  • Flour – 2 cups
  • Baking powder – 1 teaspoon.
  • Brown sugar – 1 glass
  • Heavy cream – 1/4 cup
  • Whipped cream (optional)

Directions

  1. Preheat the oven to 120 degrees. Grease a rectangular baking sheet with high sides (22.5×32.5 cm). In a medium bowl, combine dates, baking soda, and 1 1/2 cups of boiled water. Set aside for 15 minutes.
  2. In a large bowl, beat 6 tbsp margarine until creamy. Add white sugar, eggs and vanillin and beat until smooth.
  3. In a separate bowl, combine flour and baking powder. Stir in the date and oil mixture. Beat well. Pour the resulting mass onto a baking sheet and bake for 30 minutes, until golden brown. Meanwhile, in a small bowl, heat the brown sugar, cream and the remaining 4 tbsp oils. Boil over medium heat for 1 minute. Lubricate the surface of the finished pudding with the resulting mixture and place under the broiler for 30 seconds. Chill the caramel pudding at room temperature for 15 minutes. Remove the pudding from the baking sheet and serve warm with whipped cream (optional).
