Ingredients

For the dough:

  • 1 egg (s)
  • 0.5 ½ cup sugar
  • 1 tablespoon apricot jam
  • 1 ½ teaspoon vinegar
  • 1 cup flour
  • 1 teaspoon Baking powder
  • 1 teaspoon baking soda
  • 1 cup milk
  • Fat, for the shape
  • Breadcrumbs, or grated nuts for the shape

For the cast:

  • 1 cup milk
  • 1 cup sugar, brown
  • 1 cup water
  • 125 g butter or mararine
  • 1 teaspoon vanilla extract

Instructions

  1. Cup refers to the English unit of measurement cup = 237 ml.
  2. Preheat the oven to 180 ° C.
  3. Beat the egg and sugar until frothy, add the rest of the ingredients except for the milk and stir. At the end add the milk, the mixture is relatively liquid. Grease an ovenproof dish 28 cm² and sprinkle with breadcrumbs or grated nuts. Pour in the mixture and bake in the oven for 45 minutes until golden brown, avoiding opening the oven door if possible. The pudding rises a lot, so do not fill the mixture more than 2 cm high into the mold.
  4. In the meantime, let the ingredients for the glaze boil in a saucepan while stirring until the sugar has completely dissolved. As soon as the pudding comes out of the oven, prick a few times with a wooden stick and immediately soak it little by little with the hot icing until all the liquid is absorbed.
  5. Serve lukewarm with fruit or vanilla sauce!
