Ingredients

  • 4 peach (s), ripe
  • 60 g suar
  • 20 g butter
  • 100 ml white wine
  • 3 egg (s)
  • 250 ml wine, white, semi-dry
  • 1 teaspoon cornstarch
  • 2 tablespoon sugar
  • 0.5 ½ lemon (s), add the juice

Caramelized Peaches with Sparkling Wine

Instructions

  1. Score the peaches crosswise and briefly blanch in boiling water, then cool in ice water. Now peel off the skin, cut in half and stone.
  2. Caramelize the sugar in a pan, deglaze with white wine and reduce a little. Add the peach halves and let them steep for about 5 minutes over a low heat.
  3. For the frothy wine:
  4. Mix the eggs, white wine, starch, sugar and lemon juice in a saucepan with the whisk, bring the mixture to a boil over medium heat while beating constantly. Remove the pot from the heat and place on a plate, arrange the peaches on top.
  5. Alcohol-free variant:
  6. Replace the wine with grape juice or apple juice.
