Carrot Muffins

Ingredients

  • Wheat flour – 1 glass
  • Whole grain flour – 1 cup
  • Apple puree – 1 glass
  • Cream cheese – 170 g
  • Carrots – 4 pcs.
  • Eggs – 2 pcs.
  • Brown sugar – 0.75 cups
  • Vegetable oil – 1/3 cup
  • Honey – 3 tbsp
  • Baking powder – 1 teaspoon
  • Soda – 1 teaspoon
  • Ground cinnamon – 0.75 teaspoon
  • Salt – 0.25 teaspoon
  • Ground ginger – 0.25 teaspoon

Instructions

  1. Preheat the oven to 180 degrees. Prepare 15 muffin molds, insert paper molds into them. Grease paper molds with oil.
  2. Peel the carrots and grate on a fine grater. You will need 2.25 cups of grated carrots.
  3. In a large bowl, combine flour, sugar, baking soda, baking powder, salt, cinnamon and ginger.
  4. In another bowl, beat eggs, add 2 cups carrots, applesauce and butter. Mix.
  5. Pour the resulting mixture into dry ingredients. Mix.
  6. Divide the dough into paper molds, filling them three quarters full.
  7. Bake for 20 minutes. Willingness to check with a wooden skewer. Refrigerate. Take out muffins in paper tins.
  8. Beat cream cheese. Add honey, beat for 1 minute.
  9. Decorate with the resulting mass of muffins. Put some grated carrots on top.
