Chicken Pickle with Barley

I have a pickle for lunch today. Maybe you will like it, with chicken.

Ingredients

  • Chicken – 500 g
  • Pickled cucumbers – 150 g
  • Cucumber pickle – 0.5 cups
  • Potatoes – 2 pcs.
  • Onions – 1 pc.
  • Carrots – 1 pc.
  • Pearl barley – 0.5 cups
  • Salt to taste
  • Vegetable oil (for frying) – 30 g
  • Tomato paste – 1-2 tbsp
  • Greens to taste

Directions

  1. Wash the chicken (chicken wings) and put it in a saucepan. Pour 2 liters of cold water, put on fire. Bring to a boil, remove the foam, cook chicken for about 20 minutes.
  2. Meanwhile, peel, wash the potatoes. Cut into cubes.
  3. Rinse the barley well.
  4. Put barley and potatoes with the chicken. Cook for 20 minutes over low heat, covered.
  5. Peel carrots and onions, wash. Cut the onion into cubes and the carrots into thin strips.
  6. Dice the pickles.
  7. Preheat a frying pan, pour in vegetable oil. Put onions and carrots in hot oil. Simmer over medium heat, stirring occasionally, for 3-4 minutes.
  8. Then add cucumbers, simmer for about 2 minutes. Then add the tomato. Mix.
  9. Put frying in a saucepan, add the brine, salt. Cook the pickle with chicken barley for 10 minutes under a lid over low heat. Wash and finely chop the herbs. Add the herbs to the saucepan before serving.
  10. Pickle with chicken barley is ready. Serve with sour cream.
