  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 250 ml water, lukewarm
  • 15 g fresh yeast
  • 1 teaspoon salt
  • 450 g wheat flour type 405

Instructions

  1. Mix the flour with the salt. Heat the water in the microwave, dissolve the crumbled yeast in it with a fork, add the sugar, the olive oil and the mixture on the flour and knead into a dough first on a lower level and then on the highest level with the dough hook of the food processor.
  2. Heat the oven to 50 ° C top / bottom heat.
  3. Put the dough in a bowl and cover with a cloth. Turn off the stove and let the dough rise for 20-30 minutes until it has visibly enlarged.
  4. Then knead again and roll out on baking paper into a rectangle of approx. 30 x 40 cm. Fold in the short sides once and roll up with the long side into a ciabatte. Place the bread with the baking paper on a baking tray, cover again with a cloth and let rest or rise for about 20 minutes at room temperature.
  5. Preheat the oven to 210 ° C top / bottom heat. Place a larger pot filled with water on the bottom of the oven (for the necessary moisture) then bake the bread on the middle rack for about 35 minutes.
