  • 2 tablespoon olive oil
  • 100 g smoked bacon
  • 300 g minced meat, mixed

  • 100 g cheese, rated

Instructions

  1. Make a shortcrust pastry from flour, salt, egg and butter, shape the dough into a ball and wrap it in cling film and place in the refrigerator for half an hour.
  2. Clean the leek, remove the damaged leaves, slit the stalks open and wash them under running water, then cut into fine strips. Cut the smoked bacon into small cubes and fry in a pan. Add the minced meat, crumble and let it take color, possibly add a little olive oil. Then add the leek, season with salt and pepper and sauté until soft. Season well with garam masala and cayenne pepper.
  3. Cover the bottom of a springform pan with baking paper and only then put the edge on it, do not cut off any excess baking paper, it will help later when serving. Roll out the dough thinly, cut it to size and cover the form with it. Line the edge with the remnants of the dough.
  4. Whisk the eggs in a bowl with the cream, stir in the cooled leek and minced meat mixture and season again with the spices. Put everything on the dough base and smooth out. Spread the grated cheese on top.
  5. Bake at 180 ° C hot air (200 ° C top / bottom heat) for about 30 minutes on the bottom rack.
  6. To serve, loosen the form, pull the quiche with the baking paper onto a sufficiently large cutting board and cut into portions.
  7. A mixed salad goes well with it, for example.
