Ingredients

  • 200 g couscous, instant
  • 250 ml vegetable stock, cold
  • Sambal Oelek
  • 2 tablespoon honey
  • 1 lemon (s)
  • 1 bell pepper (s), yellow
  • 1 red pepper (s)
  • 1 cucumber (s)
  • 4 tomato (s), pitted
  • 150 g feta cheese
  • 1 bunch parsley, chopped
  • salt and pepper

Instructions

  1. Pour the cold vegetable stock over the couscous in a bowl and let it steep for 10 minutes. Meanwhile, cut the vegetables into small cubes and squeeze the lemon. Also dice the feta cheese. Now add these ingredients to the couscous. Then season with salt, pepper, honey and Sambal Oelek. A teaspoon is enough for me, rather even less.
