Ingredients

  • 12 shrimp (s), frozen, ready to cook
  • 200 g potato (s), peeled, washed and cut into small pieces
  • 0.5 liter ½ milk
  • 1 kg asparagus, green, washed. woody ends cut off
  • salt and pepper
  • 2 tablespoons oil
  • 200 g whipped cream
  • 1 teaspoon lemon juice

Instructions

  1. Bring the potatoes, 200 ml water and milk to the boil. Cover and simmer for about 10 minutes.
  2. Cut 6 stalks of asparagus diagonally into thin slices. Cut the remaining asparagus into pieces and add to the potatoes. Simmer for about 10 minutes. Season with salt and pepper.
  3. Heat oil in a pan. Fry the asparagus slices in it for 2 minutes. Add the prawns and continue frying for 2-3 minutes. Season with salt and pepper.
  4. Puree the soup finely and stir in the cream. Season with salt, pepper and lemon juice. Serve the soup with asparagus and prawns.
