Ingredients

  • 0.5 ½ organic lemon (s)
  • 2 boxes cress
  • 2 tablespoon pine nuts
  • 40 ml olive oil
  • 1 clove garlic
  • 1 teaspoon honey, liquid
  • salt and pepper
  • Chili powder or cayenne pepper

Instructions

  1. Wash 1/2 lemon, squeeze 1 teaspoon lemon juice, rub off the peel. Cut off the cress and finely puree with pine nuts and olive oil. Squeeze in the garlic. Stir in lemon zest, 1 teaspoon lemon juice and honey. Season with salt, pepper and chilli or cayenne pepper.
  2. Use: Mix the pesto with pasta and sprinkle with parmesan.
  3. Tastes wonderfully fresh on hot summer days!
