Ingredients

  • 1 chicken
  • 1 apple
  • 3 clove (s) garlic
  • 100 ml red wine, lovely
  • 3 tablespoon olive oil
  • salt and pepper
  • 2 tablespoon parsley
  • 100 ml chicken broth

Instructions

  1. The recipe is sure to be enough for 3 people, but we like to eat chicken and we managed it together too.
  2. Thaw the chicken, wash it with water and pat dry. Brush with olive oil and salt and pepper well inside and out. Core the apple and cut into wedges. Peel the garlic cloves.
  3. Fill the chicken with about 3 apple wedges and the garlic cloves and place in a roaster (we use an oval casserole dish, that works too). Sprinkle the parsley over the roast chicken. Place the remaining apple wedges around the chicken and pour in the red wine.
  4. Now let the chicken roast in the preheated oven at 200 degrees for about 100 minutes. Brush some of the stock over the chicken about every 20 minutes, this creates a crispy, crispy skin.
  5. After the roasting time, take the chicken out of the roaster and puree the meat stock with the apples and the chicken stock to a sauce.
