Ingredients

  • 250 g pasta (e.. fusilli)
  • Salt water
  • 500 g chicken breast fillet (s)
  • 2 red pepper (s)
  • 4 carrot (s)
  • 3 clove (s) garlic
  • 400 ml coconut milk
  • 3 spring onion (s)
  • 60 g peanuts, unsalted
  • 2 tablespoon curry paste, yellow
  • 2 teaspoons sambal oelek
  • salt and pepper
  • Curry powder

Instructions

  1. Cook the pasta in salted water. In the meantime, cut the meat and vegetables into cubes.
  2. Sear the meat with the garlic, spring onions and peanuts, then remove from the pan, fry the pasta briefly in the pan and set aside.
  3. Then fry the vegetables, add the meat again and fry for 2-3 minutes. Add the noodles, deglaze with the coconut milk, season and simmer for 10 minutes.
  4. Tip: The meat can be marinated beforehand with the peanuts, 2 tablespoons of oil, the spring onions, sambal oelek and garlic.
