Ingredients

  • 500 g chicken les, peeled, only the pure meat it
  • 600 ml coconut milk
  • 2 tablespoon curry paste, red (cautious people take less)
  • 1 tablespoon turmeric, ground
  • 600 ml chicken broth
  • 4 tablespoon fish sauce
  • 1 tablespoon soy sauce, dark
  • 1 lime (s), the juice it
  • 500 g pasta (e noodles), fresh

For the set:

  • 5 spring onion (s), chopped
  • 4 chilli pepper (s), red, chopped
  • 2 tablespoon onion (s), roasted (Asia shop)
  • 5 tablespoon mustard cabbage, Chinese pickled, rinsed and cut into small pieces
  • 2 tablespoon coriander greens

Instructions

  1. Cut the chicken into bite-sized pieces.
  2. Remove 200 ml coconut cream from the milk (if necessary, put the can in a cool place beforehand, then it’s easier) and bring to the boil in a large saucepan while stirring until it bubbles. Then add red curry paste and turmeric and stir until it smells fragrant. Add the chicken and stir until the meat is well coated with the paste. Add the rest of the coconut milk, the chicken broth, fish sauce, soy sauce and cook for about 15 minutes. Season to taste with lime juice.
  3. Boil 1 liter of water in a large saucepan and boil the pasta vigorously for 1 minute. Then drain and pour into portion bowls.
  4. Prepare the ingredients for the garnish and then pour the soup over the pasta. Everyone then takes from the set what they want and what they like.
