Ingredients
- 1 kg carrot (s), carrots
- 1 ½ kg potato (s), mainly waxy
- 1 small kohlrabi
- 2 leeks
- 0.25 ¼ celeriac, approx., Amount depending on size
- 1 bunch parsley
- vegetable broth, instant
- a bit salt
- possibly sausages, Viennese
- Maggi

- This is the special recipe of our grandpa Alois.
- Our kids love this vegetable soup. The special mix of ingredients gives this vegetable soup a particularly delicious taste. So that it doesn`t get forgotten, that`s why here is the recipe - for Grandpa Alois and my children.
- Clean the leek, peel the carrots and cut both into fine rings.
- Peel the potatoes and kohlrabi and cut both into small cubes.
- Chop the celery a little too.
- Put all the vegetables in an appropriately sized saucepan and fill with water until the vegetables are almost covered. Now bring the whole thing to a boil, simmer for about 30 minutes on a low flame with the lid closed.
- Occasionally mash the vegetables a little with a potato masher.
- In the meantime, pluck the parsley from the stems.
- Season to taste towards the end of the cooking time, add a little salt and 2 to 3 cubes of vegetable stock to taste. The homemade broth tastes better, of course, but you can of course also use grained, ready-made broth.
- At the very end, add the parsley and bring to the boil again.
- Grandpa always had Wiener sausages with it. The sausages were warmed in an extra pot and only cut into small pieces at the table and added to the soup.
- By the way: Grandpa`s secret ingredient was an additional splash of Maggi - but that is of course a matter of taste.
- In any case, it doesn`t work without it with our children - just like with grandpa.
