Eggplant Baked with Bacon

For lovers of grilled vegetables, a simple recipe for baked eggplant with bacon. Cooking eggplant in the oven is very simple and quick. Also, eggplant with bacon can be baked on the grill, then this dish will greatly benefit in taste.

Ingredients

Medium eggplant – 1 pc.
Bacon – 100 g
Salt to taste
Ground black pepper – to taste
Vegetable oil (if necessary) – to taste

Directions

Prepare the food you need. You can turn on the oven immediately.
Wash the eggplant, dry it and cut into 1 cm thick slices. If you wish, you can cut off the tail, but it is better to leave it for beauty. Season the sliced eggplant with a little salt.
Cut the skin off the bacon and cut the bacon into thin slices. They should be about the same size as eggplant slices.
Place one piece of bacon between the eggplant slices. Fasten everything with a wooden skewer in the center so that the eggplant and bacon hold better. (You can just string the eggplant slices and bacon slices tightly onto the skewer.)
Transfer the eggplant and bacon on a skewer to a suitable baking dish. Season with salt and pepper to taste. You can sprinkle the eggplant with vegetable oil before baking, especially if you are using bacon with a thin layer of bacon, otherwise the eggplant may turn out to be dry. Place the eggplant in an oven preheated to 180 degrees and bake for about 40 minutes.
Baked eggplant with bacon, serve as a side dish or as a separate dish.
