  • 3 eggplant (s)
  • 6 tablespoon mayonnaise
  • 3 tablespoon vinegar
  • 1 clove garlic, peeled and finely grated
  • salt and pepper

Instructions

  1. Wash the aubergines and prick with a fork so they don`t burst in the oven. Bake in the oven at 180 to 200 degrees for 80 minutes or until they are very soft. Then chill a little so that you can touch them.
  2. Remove the skin with the stalk. Put the aubergine in a bowl, well pureed. Add the remaining ingredients, mix and season to taste. Cover and chill in the refrigerator.
  3. Serve as a spread or side dish to grilled or other meat dishes.
