Ingredients

  • 240 g flour
  • 150 g butter
  • 2 egg yolks
  • 70 g powdered suar
  • 2 teaspoons vanilla sugar
  • 1 lemon (s), untreated, grated zest, or pck.Citroback X)
  • 1 pinch (s) salt
  • Raspberry jam and / or currant jam
  • Icing sugar for dusting

Instructions

  1. Knead all ingredients together with the dough hook to a smooth dough. Chill for 1 - 2 hours.
  2. Line a baking sheet with parchment paper. Preheat the oven to 200 degrees top / bottom heat (circulating air approx. 180 degrees).
  3. Shape the dough into small balls and place on the baking sheet. Use a wooden spoon handle dipped in flour to make holes in the balls. Attention - please do not pierce!
  4. Stir the jam until smooth and fill it with a piping bag (I always do this with a small espresso spoon) into the indentations of the dough balls.
  5. Bake in the preheated oven for 10-15 minutes. Please watch! You mustn`t get too brown!
  6. Let cool down, then dust with powdered sugar.
