Ingredients

For the dough:

  • 250 g flour
  • 100 g butter
  • 8 tablespoon water, cold
  • 4 teaspoons vinegar
  • 1 pinch (s) salt
  • Flour for the mold

For covering:

  • 5 tomato (s) (vine tomatoes)
  • 2 small onions
  • salt and pepper
  • 2 tablespoon Dijon mustard for brushing

For the cast:

  • 2 egg (s)
  • 200 g crème fraîche or sour cream
  • 3 tablespoon milk
  • 50 g parmesan cheese
  • Basil, chopped
  • Herbs, Italian
  • Paprika powder
  • possibly spice (s) your choice

Instructions

  1. Knead the flour, butter, water, vinegar and salt first with the dough hook and then by hand until it becomes a nice, smooth dough. Then put the dough in aluminum foil in the refrigerator to cool.
  2. Cut the tomatoes into slices and season with salt and pepper. If possible, let it steep for up to 1/4 hour. In the meantime, cut the onions into slices and sauté on a very low heat for about 15 minutes until translucent.
  3. Then whisk together eggs, crème fraîche, milk, salt, pepper, parmesan, chopped basil and other spices (Italian herbs, paprika powder, ).
  4. Press the dough into the mold with a little flour, poke holes in the bottom with a fork and brush with mustard. Spread the onions and then the tomatoes (without juice!) On the floor. Pour over the topping and bake at 225 ° C for 30 - 35 minutes (top / bottom heat, the mixture dries out with circulating air).
