Cut the bacon and onions into cubes. Wash and drain fresh kale.
Heat the oil in a pan and fry the bacon until crispy, then add the onions and fry them briefly. When the onions are translucent, add the kale. Fry for about 10-15 minutes, adding a little water if necessary. Shortly before the end of the cooking time, add the vegetable stock and mustard, and pepper if desired.
Boiled potatoes and smoked pork or thin ribs go well with this.
