Ingredients

  • 1 onion (s), chopped
  • 2 slices bacon, thinly sliced
  • 0.5 ½ small white cabbage
  • 0.25 ¼ pumpkin (se) (Hokkaido)
  • 1 apple
  • 1 teaspoon oil (walnut or olive oil)
  • 1 teaspoon sugar
  • 0.5 teaspoon ½ caraway, possibly less
  • 1 tablespoon balsamic vinegar
  • 150 ml vegetable stock
  • salt and pepper
  • cream cheese
  • rocket

Instructions

  1. Cut the cabbage into small pieces and wash. Wash the pumpkin, remove the seeds and also cut the pumpkin flesh into small pieces (Hokkaido with the skin).
  2. Cut the bacon into small pieces and fry in the oil, add the onions and fry lightly, add the sugar and let it caramelize. Deglaze with vinegar and season with caraway seeds.
  3. Now add the cabbage and fry lightly, add the pumpkin and fry briefly. Cut the apple into cubes and add.
  4. Pour in the vegetable stock (please vary the amount - the vegetables should stew a little in the liquid so that they are nice and soft and do not burn, but under no circumstances should they be too much). Now put the lid on and let it simmer over low heat.
  5. After about 20-30 minutes the vegetables should be soft, then season with salt and pepper. If you like, you can garnish the vegetables on the plate with rocket and cream cheese. Tastes delicious and looks good.
