Cabbage Soup with Pumpkin and Beans

Cabbage soup with pumpkin and beans is cooked in chicken broth. Thanks to the wide variety of vegetables – pumpkin, cabbage, potatoes, celery, onions, carrots – cabbage soup is tastier and more aromatic. Another interesting feature of this soup is that onions and carrots are not fried as usual. Therefore, the taste of the dish turns out to be more subtle and light. Try it!

Ingredients

  • Chicken (any part) – 300 g
  • White cabbage – 200 g
  • Pumpkin – 250 g
  • Beans (dry) – 200 g
  • Potatoes – 250 g
  • Carrots – 100 g
  • Onions – 100 g
  • Root celery – 120 g or dried – 0.5-1 teaspoon
  • Bay leaf – 2 pcs.
  • Allspice peas – 7 pcs.
  • Fresh parsley – 15 g
  • Salt to taste
  • Sour cream (for serving, optional) – to taste
  • Water – 2.1-2.2 l

Directions

  1. We wash the beans. If the beans are large, it is advisable to soak them in advance. Pour the chicken in a saucepan with water, bring to a boil, remove the foam and cook over low heat for 40-60 minutes. After that, remove the chicken from the broth. Strain the broth. Chicken meat can be used for other dishes or then added to each serving of ready-made cabbage soup.
  2. Add the swollen beans to the broth, bring to a boil and cook for 40-60 minutes, almost until tender. It is advisable not to overcook the beans so that the skin does not burst. Peel the onions and carrots and cut them into small cubes. Peel the potatoes and cut them into small pieces or medium cubes. Peel the pumpkin and cut into medium cubes. Chop the cabbage into strips. Peel the celery and cut into strips. Add onions and carrots to a saucepan with broth and beans. Next, add the pumpkin. And we lay the potatoes. Add the cabbage. We also add celery. Add bay leaves and allspice.
  3. Cook the cabbage soup for 15-20 minutes, until the vegetables are ready. Salt cabbage soup 5 minutes before the end of cooking to taste.
  4. Chop the parsley. Pour ready-made cabbage soup with pumpkin and beans into plates, sprinkle with chopped parsley and serve with sour cream.
